Do i have to cut the cable an take connector off

No. Unscrew the ends of the connector. Then push the cable through the part you just took off and plug the cable into the connector. Screw the end back on. Do the same thing on the other side of the connector with another cable.

what is the maximum number you can daisy chain?

I don't know. I ordered two of them and neither one of them works. So I gave up. Sorry I couldn't answer your question better.

What are the dimensions of the extenders themselves? Will they fit in a 1" conduit?

It will not fit inside 1-inch conduit, will need to be 2 inches. If that's not an option might consider adding a J-box long enough to accommodate the PoE Extender.
