Oh my gosh! I LOVE this pizza crust and so does my husband who is not gluten-sensitive. I use the whole bag of mix to make a crust to fill my half sheet pan. I usually let it rise longer than the bag calls for--more than one hour proofing in my oven. Then, I press it out just as the instructions suggest and pre-bake the untopped crust as suggested. After topping and baking according to instructions, it's a heavenly, puffed-up and soft crust! Maybe others make it thinner, which, I imagine would give a crispier crust.

Q: Does this crust freeze and thaw well? I want to make dough balls and store them.

Yes it is just my husband and I so a whole bag it too much for us. I use one half and freeze the other half. Freezing does not change the dough at all it bakes very well.

Q: I never use eggs and this mix calls for eggs. Can I use this mix anyway?

On the back of the package it tells you how to make it without eggs. The recommendation is to combine 2 tablespoons of flaxseed meal with 6 tablespoons of water and let stand for 6 minutes. Then add this to the mix instead of eggs.
