Q: beside cooking pizza, can i use it as a griddle?

It says that cooking is not limited to pizza. Booklet gives cooking temps for eggs bacon pancakes and other grilled foods

Q: Is the skillet part removable from the unit to clean

No it is nor removable how ever, once you are done cooking, you can wash and clean with sponge or even directly under faucet but have to make sure they are dried before plug them back in again.
