High protein, plant-based pasta, absolutely delicious!!
This is the perfect replacement for traditional pasta.. it's high in protein, and doesnt get mushy or gross if you cook it for a tad too long!! I love that this is made from beans, and plant-based.. this pasta cooks really quickly and it easy to season, or eat with organic pasta sauce! I buy cases of this to keep on hand for quick, easy meals since the high protein content keeps me full for a long time! This is a great value for the price, and I always keep a few boxes in the cupboard.. definitely worth trying this out if you're searching for a pasta replacement! This also has a slight flavor of its own that I personally really enjoy, and the texture is great!

Excellent and Nutritious Gluten-Free Pasta by Explore Cuisine
Cuisine Organic Edamame & Mung Bean Fettuccine is a high quality, nutritious gluten-free pasta. It was ready in 5 minutes (al dente style), and with a quick addition of Mezzetta Basil Pesto and I had a delicious, quick lunch. It was superb. I would have been surprised, but so many other reviewers said the same. So I bought a carton of six and can foresee no problems with devouring every bite of every last box. Great cold weather addition to my cupboard.

I LOVE THIS STUFF!!!
I LOVE this product (Edamame and Mung Bean Fettuccine). LOVE. I've tried a number of alternative pastas looking for the perfect low carb one. They've all either had too many carbs and not enough fiber to offset, completely fallen apart once cooked, or the texture and/or flavor were all wrong. But this stuff is PERFECTION. But, be aware: It's NOT pasta. If you go into it expecting it to be exactly like regular pasta, you'll be disappointed. Adjust your expectations, and it works great. To me, it is like a chewier al dente texture, which I find appealing because it holds up under even the thickest sauces and in the heaviest casseroles. It does NOT have a bean-y taste; it's pretty neutral flavor-wise, which is why I've happily used it with bolognese, veggie marinara, in turkey tetrazzini and tuna casserole, chicken and broccoli alfredo, etc. Only thing I haven't tried is "buttered noodles," because I'm not a fan. The super-high fiber content might be tough for some to adjust to digestion-wise if that's not been a regular part of their diet, but fiber is essential for me doing my low carb thing. This has the highest fiber count by far of any pasta, regular or otherwise. What I most appreciate is that this (along with spaghetti squash!) has given me the freedom to enjoy sauces and casseroles again, without fear of throwing off my numbers. I can make some regular pasta for my Italian-food-adoring husband, a little of this for myself, and we can go to town on our chicken parm and marinara together. It's a little pricey, but the freedom to eat things I love again, but in a healthier way, is worth everything to me. Again, I LOVE this stuff. I wish they'd make lasagna noodles! Come on Explore Cuisine, give the people what they want!

healthy and good, but not a perfect replacement
I really like this pasta. I first tried it because I was diagnosed with celiac disease. I also like that it is much healthier (very high in fiber and protein). While I like the taste and texture, it isn't the same as regular pasta. It can feel a little mushier, and the strands stick together a bit more. Flavor-wise, imagine something that is 90% the flavor of enriched wheat flour pasta, and 10% the flavor of white beans. Even if I could eat gluten again, I would probably buy this over standard pasta.

Taste To Be Or Not To Be
Not good, not bad, not the taste you expect when biting into a noodle. Acquired taste? Maybe. I think it depends what you serve them with. I put a stir fry over them. Not great, however eatable. The left over noodles I cut up and put in eggs, great! Needs some work to know how you like them. I do not think serving them alone is an option.

It is really good a great substitute if you can't eat pasta and it doesn't fall apart either! Low calorie too

good protein pasta substitute. stays firm, tastes good, and is very morish. I make it the night before to take to work the next day, it doesn't go mushy in the fridge.
