What is the difference in color temperature between the "soft" and "daylight" versions?

Soft temperatures or around 2700 degrees tend to be more amber much like a campfire or older incandescent bulbs. Daylight bulbs or around 5000 degrees tend to be more like arc welding. Bright white or around 3000 degrees is in the middle.

These say "not rated for use in enclosed fixtures" does that mean they can't go in a ceiling fixture in a bedroom?

If your ceiling fixture has a flat "lampshade" type thing on the underside that you need to remove to replace the bulb, then that means this bulb (at least the A21 version) can't go inside. The BR30 version can go inside something like that though.

I can't speak specifically to this LED bulb but, most plastics block common types of UV. Modern emitters that aren't specifically UV generally have very sharp intensity roll-offs outside of their specified visible spectrum wavelengths.
