once opened, how long will it keep in the refrigerator?

l Split it up into smaller containers and left 1 K in the refrigerator and froze the rest. I am still working on the first batch after 6 month with great taste. Enjoy!

How is the product kept cold when there is 8 day window delivery?

We render our duck fat such that the Water Activity Level is very low at just 0.57, which is well below the threshold of 0.85 set by govt. inspection standards. This means that there is not enough water in our product to allow microorganisms to propagate. In other words, the duck fat does not need to be refrigerated until it is opened. We ship without refrigeration and have been doing so for 8 years.
