We render our duck fat such that the Water Activity Level is very low at just 0.57, which is well below the threshold of 0.85 set by govt. inspection standards. This means that there is not enough water in our product to allow microorganisms to propagate. In other words, the duck fat does not need to be refrigerated until it is opened. We ship without refrigeration and have been doing so for 8 years.
