Can I use this when I'm done soldering for the day then come back and continue soldering over it?

It will wash off your flux so therefore you'd have to add more flux to continue soldering. I don't think it's a good idea to use the product unnecesarily the first time. It is a bit pricey.

Can you use this on stainless steel?

I only use this for my stained glass projects. I don't know if it would be ok to use on stainless steel. I'm sure there are better (and less expensive) products for stainless steel.
