Does this work on lavender to limit "shedding" of lavender heads?

It might. It keeps hydrangea for a very long time. I've sprayed hydrangea when they were fresh and then let them dry out. It worked well..

Does it work on Bearded Iris?

yes I would expect it to work on all flowers. It puts a waxy coat on the flower so the flower retains moisture and is less like to wilt.
