Great, but don't expect it to behave like regular flour
You'll have to experiment a lot to get cakes, pancakes, and the like to mimic the types you can buy from your local grocery. Sometimes, there are just some things you can't replicate.Coconut flour is a bit different than other flours. Because all the oil is removed, it's very dry, and sucks up liquid like a sponge. Since it's gluten free, you have to add eggs, oil, or water to get it to behave just the way you want it to. Also, removing one or two yolks and replacing them with egg whites really helps with the final product, as you'll get a less eggy taste and more of a floury baked good taste. And if you're not afraid of fat, try and add a little more oil instead of water, and it'll really help with the dryness that some people seem to have issues with.5.99 is a really good price. Sure, it looks like it's more expensive than those bags of all purpose flours you find at the grocery store, but is it really? Consider this:Coconut flour is 45% fiberCoconut flour is a good source of proteinCoconut flour is low in fat(for those who care)Coconut flour won't slowly weaken you like wheat doesCoconut flour can last a long time.I personally make coconut flour "tortillas" to take to school, because it's portable and freezes well. I use 2 egg whites, 1 TBSP coconut flour, and 2 tbsp of coconut oil. A tub of this lasts me a good monthOnly complaint I have is that on the box, it says 1 cup of coconut flour for 4 eggs. I'd say that's too much coconut flour for 4 eggs. You'd need 5 or 6 eggs at least.

Yummy
This is the second time I've ordered this coconut flour. It's great to bake with. This is my favorite recipe to make with it. I have also used this basic recipe and leave out the chocolate and make a raspberry zinger like cake by spreading sugar free raspberry jam on top of the cake batter and sprinkling unsweetened coconut flakes on top before baking. I buy most of my baking supplies at Netrition because it's cheaper and only costs four ninety five for shipping no matter how much you buy. Here's the recipe for the coconut cake. I use 3 eggs and a little more coconut milk and use whatever sugar substitute you like. I use a mix of liquid splenda, erythritol and stevia extract. Chocolate Almond Joy CakeRECIPE4 eggs¾ cup canned coconut milk2 teaspoons almond extract¾ cup coconut palm sugar½ cup blanched almond flour½ cup coconut flour¼ teaspoon sea salt½ teaspoon baking soda¼ cups unsweetened shredded coconut1 bar of 72% chopped dark chocolate1. In a large bowl, whisk together eggs, coconut milk, almond extract and palm sugar with a mixer.2. In a smaller bowl, combine almond flour, coconut flour, salt and baking soda.3. Slowly add dry ingredients into wet with a mixer.4. Stir in ½ cup of the chocolate chips.5. Grease an 8×8 inch baking dish.6. Pour batter into dish, then sprinkle shredded coconut and remaining chocolate chips on top.7. Bake at 350° for 30 minutes. (Enjoy the smell of toasted coconut wafting through the house!)8. Cool for 1 hour.9. Serve.

Coconut Flour, not your usual flour!
OK, be sure you know this is really just ground up dried coconut! It is NOT exchangeable with regular flour! One must read about how to use it for success in baking. However, if you think of it as protein powder, or a substitute for corn starch, it is easy to figure out. A couple teaspoons in a smoothie, a little in the pan to thicken a sauce. If you want to bake with it, there are recipes in cookbooks, many for free online - coconutoil.com, and coconuttraditions.com, I think. (Google it) I mix a little in my kid's "just add water" pancake mix, with an egg, a little melted coconut oil, some ground almond flour and whole milk or almond milk...it makes the best pancakes and waffles, a lot more flavor and texture, with a lot of added healthful things. I am going to give it a try in muffins, I will follow the recipe as I have read enough reviews that this is not the place to "wing it" as I usually do! But love the smell and I can't wait to taste it in baked goods!

Great in gluten-free baking
I got this specifically for use in gluten-free baking, for a low carb option. I generally stick to whole grains and nut meals for baking and wanted to use coconut flour to lighten it up a bit, change the flavor. This is the first one I've used, so I don't have a basis of comparison to other brands.I do not bake with only this flour, but cut into others. It is a bit sweet, so I cut back on my overall sweetener in the recipe. As well, it leaves a slight coconut flavor, but not enough to interfere with the overall dish. I am very pleased with the texture and flavor. As well, this was my first add-on purchase through Amazon. Interesting concept. No question the low price is why I got this brand, and I liked that I didn't have to buy 4 pounds of it and risk not liking it. The product and the add-on option were a good fit to try out the small quantity. Definitely recommend both.

This stuff is the bomb. Low carb, high fiber, good tasting, a little goes a long way. You have to learn how to cook with it, though. You can't just sub it for regular flour! I made these cinnamon rolls that were SO GOOD, it was hard to stop eating them--but you don't have to stop! They are so good for you, and if you're on a low carb diet, they are a free food! Just drink a lot of water because of the fiber content, otherwise you'll get blocked up.Oh yeah, and I have this heavenly pancake recipe that is super-high in protein, and of course low carb, so you can pig out. If you like syrup, you might have to use sugar-free, but I like just butter or pureed fruit. The only drawback is that you use A LOT of eggs when cooking with coconut flour--but I have chickens, so I have an endless supply.

Low GI and Carb and tasty
This is the first time I have tried Coconut Flour. I wanted to use it mainly for cooking because I am Gluten free. The fact it is low carb, low Glycemic, Non GMO a bonus. Its also High Fiber. I didn't know but the tin tells you very clearly that when used in baking because it has a high absorbant nature its best used with other flours at ration of 1/4 Coconut and 3/4 other flour OR you will have to increase eggs or liquid. It suggests 4 eggs for 1 cup of flour. The photo of front of the tin shows the flour as white but inside it was a very light sand/beige colour. Looking that up on Internet that indicates it has not been bleached and is more natural. It has a lovely coconut aroma. Anyway I threw caution to the wind and made some biscuits and a banana cake and along with using Coconut sugar I can say all are delicious. The biscuits did have a nice dry 'short' texture which I like. I have not baked for years! I could tell after sampling that there was a difference in the GI. I've not tried other Coconut flour so cannot compare but was happy with product. I've given 4* rather than 5* for 2 reason. The product was fulfilled by Amazon direct and whilst I think Amazon is Ace the outer plastic sleeve for use once opened on the top was very dirty/dusty. Thankfully the product was sealed in a tin so that alone didn't bother me HOWEVER I bought Feb 2016 and the expiry date is Apr 2016 which is very short-dated. Especially short dated in view of fact you don't need to use a lot if you follow the 1/4 ration to other flour advise or use it as a thickener for gravy which it also suggests and I thought a very good idea.I hope you found that info helpful.

Primal/Paleo must have!
Hubby and I have started to live a Primal lifestyle and were stocking up on all the staples we would need. I was pleased to find several on Amazon that I couldn't find in our local supermarket. This is well packaged, does what it says on the tin and now replaces wheat flour in our recipes. Our latest favourite is using it to 'bread' chicken with coconut shavings! When we run out, we will definitely be ordering again.
