Good for broth
The Emerald Cove Pacific Kombu Dried Seaweed has been a delightful and versatile addition to my pantry. This 1.76-ounce bag of silver-grade kombu offers high-quality dried seaweed that is perfect for a variety of culinary uses, especially in traditional Japanese cuisine. One of the standout features of this product is the quality of the kombu. The silver grade indicates a high-quality product, and it certainly lives up to that expectation. The kombu is thick, with a rich, deep green color, and a naturally briny aroma. Itโs clear that the seaweed is carefully harvested and dried, maintaining its integrity and flavor. The taste of Emerald Cove Pacific Kombu is excellent. It has a subtle, umami-rich flavor that enhances the dishes itโs used in. I've primarily used it to make dashi, a fundamental Japanese soup stock, and it adds a wonderfully rich, savory depth to the broth. The kombu imparts a slightly sweet, briny taste that complements other ingredients without overpowering them. Itโs also great for adding umami to soups, stews, and even when cooking grains like rice. Another aspect I appreciate is the ease of use. The kombu comes in large sheets that are easy to cut or break into smaller pieces as needed. The instructions on the bag are straightforward, making it easy to prepare even if you're not familiar with using dried seaweed. Soaking the kombu for a few minutes before use softens it, making it easier to work with and enhancing its flavor. It rehydrates well, maintaining a good texture without becoming too slimy or overly soft. The packaging is simple and effective. The 1.76-ounce bag is resealable, which helps keep the kombu fresh and dry after opening. The size is perfect for home use, providing enough kombu for multiple recipes without taking up too much space in the pantry. The clear instructions on the package also provide helpful tips for using and storing the seaweed. Emerald Cove Pacific Kombu is also a nutritious addition to meals. Itโs rich in minerals, including iodine, which is essential for thyroid health. The natural vitamins and minerals in kombu make it a healthy ingredient that not only enhances flavor but also contributes to a balanced diet. Overall, the Emerald Cove Pacific Kombu Dried Seaweed has exceeded my expectations. Its combination of high quality, excellent flavor, ease of use, and nutritional benefits makes it an essential ingredient for anyone interested in exploring Japanese cuisine or adding more umami to their dishes. Whether you're making traditional dashi, experimenting with new recipes, or simply looking to boost the flavor of your meals, this kombu is a fantastic choice. I highly recommend it to anyone looking for authentic and high-quality dried seaweed.

Great Kombu
This kombu is very good. Itโs nice and fresh - still a bit pliable and both smells and tastes great. Well, itโs dried seaweed, so it smells and tastes great for dried seaweed. The pieces are good sized and mostly from the thick part of the leaves, with a lovely chewy texture when cooked. Aside from dashi, I mostly use it for cooking beans. It gives an amazing meatless umami boost to a pot and gives the bean broth a consistency similar to what you would get from using something with a high gelatin content, like a ham shank. Makes a nice addition to a pot of rice or ramen too. Probably best to avoid using iodized salt alongside the kombu, though, unless you really need an iodine boost. When the potโs done, rinse the kombu and cut it into strips, sautรฉ it with soy sauce and mirin, then chill it down. Makes a really nice tasty cookโs treat as an accompaniment to steamed rice.

These are fantastic in a pot of beans!
I added a sheet of seaweed in my last batch of red beans (use in Mexican/Latino food). It did not taste seaweed-y at all, and actually added a lovely depth of flavor I haven't had before. I'll definitely be adding this in stews and beans where I need more umami, and it's a great source of iodine as well.

Taste is good, and seemed like it was good quality
Shipment came very quick, and price was great. Quality and flavor were good, and I was happy. I actually did buy about 6 more packs about a week or two later after the price dropped even more. I usually take about 1/3 of a sheet, crumble it in my rice, add some jasmine tea, and eat up!

Excellent, consistent, high quality.
Consistent and good. I use this for making dashi for miso soup, and for a highly reduced soy umami bomb. I can depend on Emerald Cove to provide consistent results.

Another Important Ingredient
This was my first purchase of Kombu (Kelp/Seaweed) yet another ingredient in the all-important sauce, "Dashi," the cornerstone in the foundation of Japanese cuisine. It is prized for contributing the valued "umami" flavor to those dishes to which it is added. m As I mentioned in my review of Katsuobushi (Bonito Flakes) I have become a fan of Japanese cooking, finding excellent authentic recipes on the internet and on NHK World TV, a Japanese network available in the USA. Using Amazon as my supply source for ingredients I try to keep all Japanese recipes that I prepare as authentic as I can. As far as I know, with the help of Amazon, I am succeeding.

A Pantry staple for me
Great quality! I always use a piece of kombu when I make dried beans helps with digestibility and adds a lot of nutrition! Also, great for making broth. Sometimes this can be hard to find in the stores, so I am happy. Itโs readily available here.
