What's the difference between these and the charcoal bamboo ones or are they the same thing?

Charcoal bamboo is not bamboo, it's actually fleece.

How many ounces do they absorb?!

I have no idea. Though they held up well during an entire night. Not sure how well they will do absorbing liquid as they are now falling apart.

Has anyone opened one up to see if all the layers are bamboo? Some brands hide microfiber inside and market them as bamboo...

We state in our description that the inside 3 layers are microfiber and the outside 2 layers are bamboo. Thanks

Do these come with instructions on how to care for them because I'm not seeing anything about it?

No, they don't come with instructions. I washed separately a few times without any detergent to prep them for better absorbancy, then use my regular cloth diapering routine. Cold, light wash, no detergent. Warm, regular wash, Hard Rock detergent w/2 rinses. Then dry in the dryer (I hang dry the covers though).
