Q: Is it worth the price for this wood?

The assortment is made up of larger (thicker) pieces of wood samples that I would have liked. If you have a way to cut down the wood and then plane it, the package is worth the price. Very interesting types of wood in the sample package.

I have bought a couple of boxes but the variety was hit or miss. You may try a cabinet shop or store like Rockler.

Q: Will these work for making a cutting board? for example 0.75" x 13" x 21" ?

My box came with an assortment of boards that were almost uniformly 12in length, ~1in thickness, and varying widths (about half were 2 inches, rest were ~4inches that I ripped to 2in widths) so I was able to cobble together a 12x18x2 butcher block and a 12x7x2 charcuterie board with the remaining pieces.

Q: Do you offer olive wood in planks(1/2",1/4,3/4 etc.)?

I don't, no but Rare Woods USA has the biggest selection of Olive wood, I ever saw!
