How do I unlock the logs?

If you mean unlock to extend the legs: pull up the black tab at the bottom of the black portion of the leg covering the locking pin, fold it all the way up and back to act as a lever; push this lever to release the locking pin, and extend the leg. When the leg is extended to the desired length, pull the black tab down again and snap into the original position.

What heat can the table top withstand? I have a pellet grill that I use to smoke and grill that can reach 550 degrees F.

This is a work table/bench/scaffold, not meant for any kind of heat; it is plastic. Get a stainless steel table for cooking and food prep.
