as far as I'm aware raw honey means no heat used in the harvesting of this.

What would the shelf life be for this if left unopened?

Purchased this April, the best before date is July 2024.

Could this be used in soap making?

I’m so sorry I cannot answer this one as I have no soap making experience. I suggest looking at the ingredients of natural soaps to see if raw honey is there. My gut feeling is that processed honey is probably more stable for soap recipes.
