Makes Delicious Cornbread- And Can Help Underweight Small Pets Gain Weight!
I trust Bob's Red Mill brand more than any other brand on the market. I absolutely love their products and although they can run a bit pricier than their non-organic competitors, the quality is always far superior. I use an array of Bob's Red Mill products, but this cornmeal is one of my regular purchases. I buy this set of 4 bags at least once a month. I use this cornmeal for a variety of different things including my pets, my kids, and myself.For normal customers, who don't make "food for pets" with cornmeal- I'll start my review with the 'normal' reasons this stuff is so great. It's made of one single ingredient; organic yellow corn. Ya, it's that simple- and yet somehow it's so great. This stuff is always very well packaged. Each small bag is manageable, and the contents inside always seem fresh. The meal itself is never clumpy- and there are never any large chunks of corn. It's just perfectly, evenly milled meal. And I love it! The taste is great- mild and slightly sweet (as you'd expect with corn). I've used this meal to make cornbread, muffins, and scalloped corn. This stuff never fails me. Everything I make with it tastes delicious. No additives. No preservatives. No chemicals or 'non organic' worries. It's awesome and always worth the price.The four bags come neatly packaged away in a small box that can easily be stored in a pantry. Like I already mentioned, the individual bags are very manageable in size and great for storing in a cupboard- but the box itself is also great and if you're ordering in bulk you can neatly store the box away as well. It's one of the reasons I usually make orders of 2 to 3 boxes of this set at a time; they're easy to store!But the real reason I love this corn meal is the fact I use it to save animals lives (say wah? - I know! Keep reading!). I foster small pets through our local rescue who need special care. One of the main things I work with are severely malnourished and underweight animals. I make my own 'weight gain supplements' for a variety of pets including rodents and birds. This cornmeal is one of the main ingredients in my weight gain supplements for mice, rats, gerbils, hamsters, and all domestic birds (including poultry). It's very high calorie and high fat for 'grain / seed eating animals', which means it can easily help those animals put on healthy weight quickly. I mix this cornmeal with corn, bob's red mill coconut flour, coconut oil, and hulled sunflower seeds to create an organic all natural weight-gaining supplement for small pets that is free of steroids or hormones. And IT WORKS. 9 out of 10 times that little mixture alone will help an animal quickly, efficiently, and healthily put on weight- often times literally bringing them back from the brink of death. So- thank you Bob's Red Mill, although your intention wasn't to save animals- you've helped me do so with your very high quality product!I really can't get enough of this stuff. The quality is great. It's fresh. It's well packaged. It's organic. And it comes from a company that drives out equally as high quality products with the other items they offer. If I could give this stuff 6 stars, I would.

Real Southern Stone-Ground Corn Meal.
I grew up eating cornbread, not the kind made with finely ground meal, white flour, sugar, and other non-Southern affectations. No, my family made the real thing : Stone Ground Coarse Yellow Corn Meal ( Personally fetched from the mill.), buttermilk, eggs, baking soda, salt, and bacon drippings. A large cast iron skillet was heated in the oven, with a spoonful of bacons drippings, until smoking hot, then the batter was poured into the pan. The pan was so hot, that the bottom and sides of the batter immediately fried and climbed the sides of the pan. This pan by the way, was a sacred object in our kitchen, it was never to be washed with soap and water, never scrubbed, and only Mother was allowed to use it. When the cornbread was baked, she would grab the hot pads and flip the heavy, cast iron pan over onto a plate. The cornbread came sliding smoothly put of the pan, exhibiting a golden, crispy, and yummy crust. Mother then wiped the hot pan out with a paper towel, and left it on the stove to cool down, that was it. Generations of Southern women seasoned these precious pans and passed them down to a lucky daughter.The corn bread was yummy, tart and rich from the buttermilk, crispy on the outside, smelling of bacon, and crumbly and speckle-colored on the inside. This freshly ground corn meal was not solid yellow, it had various colors of specks in it, including black specks. Since it had just been ground, this was not mold or dirt, that was just what stone-ground corn meal looked like. I grew-up, left home, and forgot about cornbread for many years. But then the urge for it returned, I purchased my own cast-iron skillet and began a search for corn meal. I could not find any coarsely ground, stone ground corn meal that even remotely resembled what I grew up with until I tried this meal from Bob's. What a relief, the grind is just right, the meal is coarse and full of differently colored specks, just exactly like what I grew up with. The corn bread that I produced was perfect, just as Mother would have made it. This meal is really expensive, my female Southern ancestors must be turning in their graves over what I paid for this. But......it is authentic, and just exactly what was needed to produce a real old-fashioned Southern cornbread.* Always store this in the freezer, it will go rancid very quickly otherwise.

makes good cookies but should be consumed fast after opening
When it comes to buying corn products, Organic options are my only choices since over 95% of all corn grown in the US is GMO. Is GMO products real evil or not is a total different debate. However, I just feel safer when avoiding them. I like Bob's red mill as a company which offers a wide range of products. I have tried a couple of them and although they are not always the most affordable options they are mostly of good quality and avoid nasty ingredients that are found in some other counterparts sold in stores.I bought this to make cookies and I tried a couple of recipes, the one on the back of the pack is a good one too (but you can limit the butter a little to make your cookies healthier). You can also use it to improve the texture of various foods. It is tasty plus not very fine grind so you can feel the rough texture which is good for me.The only concern so far is the difficulty to store it once opened. I bought it as 4 pack, opened one of them and used it a couple of times in a month but then, did not use it for a while. When I came back to use it again, I found it got molded all over so I had to discard it. Mostly grain products are quite easy to store but this one proved to be an exemption so it is good to keep this in mind before ordering. (may be using a dessicant in a sealed container could help.)Finally, as I said before, I can not stand behind the price tags of most of the Bob's red mill products that is why I often choose cheaper alternatives, provided that they meet my quality criterias. However, a $13.16 price tag with the option of saving up to 20% through subscribe and save program plus prime membership is a fair one. So I am happy with the purchase..

Makes great cornbread
I love the grind of this.... Not too fine and not too coarse. Your cornbread will have a bit of texture to it. It made great cornbread.
