Hi they are neither sweet nor bitter ., they taste like potatoes when raw, They are mainly soaked overnight ( doubled in size ) then made a falafel paste after adding leeks ,onion ,garlic , fresh parsley , fresh coriander you can check YouTube falafel paste the Egyptian way It’s very filling I hope that helps
