Razor Sharp, Precise, and has a serrated edge on the back for sawing through tough skin and bones. Here is an example of the beautiful work this knife did! Barely had to put any effort into this! I use to use a Deba Knife but this is way cleaner and the meat ratio is better since the blade is thin so it it just glides right above the bones perfectly! I rather go with this stiff one instead of the flexible one for bluefin.

Solid knife, holds edge well and flexibility of blade makes filleting a breeze.

Edited review from 1 to 5 stars. Although the tip of the knife broke off after the first use Dexter Customer Serivice was OUTSTANDING. Pretty sure through dealing with Dexter that this was a one off situation that happens so rarely that it even caught them off guard and immediately addressed the issue. They take pride in what they do!! I will never have an issue with a company that strives for perfection in an imperfect world. Will do business with them again!!

Flat out, the dullest knife out of the box I have ever purchased. Was sorely disappointed. Once I got it sharpened it was OK. the "flex" isn't exactly the most flexible filet knife in the world. It's pretty stiff actually, but the handle is nice.
