why is the cartiridge and tone arm vibrating/shaking when playing? Record sounds warped/under water, but sounds fine on other record players

If the tone arm and cartridge are vibrating that means you have a poor connection. Make sure you adjust the tone arm and cartridge and adjust your belt for maximum performance.

Can I use WIRED headphones? I don't see a headphone jack. OR would I need to order some sort of RCA adapter to connect wired headphones? Thanks.

With the adapter you may get sound, but it would be very quiet. You'd need a separate headphone amplifier or AV receiver.
