Are these crunchy or chewy?

They are hard, crunchy. They need to be re-hydrated. They are very flavorful

What do you use this in?

I used it in spaghetti spice packet. In other words, I did a DIY spaghetti sauce mix, similar to the McCormick's Thick and Zesty Spaghetti packet. Worked great. After cooking, it re-hydrates a bit and has texture. I would assume you could use it in any recipe that calls for red bell peppers SO LONG AS you are cooking it for a period of time so it has a chance to reconstitute. Flavor is less intense than a fresh bell pepper, kind of sweet.

Is this sweet red bell pepper?

Yes, I believe so, if you're referring to the red bell option that sometimes comes with orange and yellow varieties at the market, or that you can grow in garden. I've really enjoyed adding this to quick soups and broths. The flavor is really nice.
