Surprised by Quality
I usually buy cheap knives from the Asian stores at about $3-$5. Decided to buy "good" knives to carve a large Lechon (roasted pig) for my daughter's first birthday party. I ordered a heavy meat cleaver (other brand) and the KOFERY 8-Inch Butcher Knife. I was expecting the KOFERY to be just somewhat better than the cheap $3 knives. When I received it, I was surprised by the quality. The blade is thick, strong, and sharp. I would say the blade is at least 3-5 times thicker than the cheap $3 knives. The KOFERY knife is also very aesthetically pleasing.I carved the Lechon with ease. Years prior, using the cheap Asian store knives, we would just get cuts that were the equivalent of food scraps. This year, mainly using the KOFERY knife, the cuts were a lot better - nice, clean, and cubed. I used it to split bone joints and carve sections of the pig. I did try to chop through a shoulder bone, but failed. It did not dent the blade. I then used the (other brand) heavy meat cleaver for any bone. I used the KOFERY on 99% of the Lechon.Overall, I highly recommend the KOFERY 8-Inch Blade Handmade Forged Stainless Steel Butcher Knife. I am planning on buying another KOFERY knife to cut some bulk Costco meat. If it is as nice as this one, I will then trust the quality of the KOFERY brand.

Good knife
It's an amazing knife. Lightweight. Good balance and won't exhaust you. Great value. Easy to hone with a steel and the grip is good if you know how to hold a knife.

A Great Knife for Crippled Hands
I just received this knife and I love it. I have a full set of expensive knives.My challenge is that my hands have become crippled and I can't hold a knife the correct way anymore.I need to be able to drag the blade across whatever I am cutting while holding the knife with my fingers on top of the handle.A rounded front edge helps. I have one smaller knife that has that type of blade.The shape of the blade is why I bought this knife.It works great!It was super sharp on arrival so keeping it honed up will be easy.I just ordered another one as a gift.The box can be used as a storage container to help protect the blade.

Large knife, versatile, sharp
I am a Chef / caterer that does a lot of on site work at homes and businesses. This knife is great as a chefs knife or to perform more heavy duty chopping or slicing. Holds a sharp edge well and is build quite sturdy. I’ve been using it everyday for a month without issue. It came a little scuffed when I got it and that is why it got 4 stars. Highly recommend.

A perfect design for small (i.e. city apartment) kitchens
I've wanted this knife ever since I saw it in NYC a long time ago. Instead of hauling out a big heavy 8"+ German knife, this lighter knife is great for smaller work spaces. Even tho' it looks like a cleaver, don't try and cut through bones etc. you'll damage the edge. Even tho' it's stainless make sure the knife is dry before putting it away.

Blade Is Exceptional. Handle Is Cheap Wood And Poorly Made
Blade is exceptional, handle is very cheap wood and poorly made. Mine has a sizeable knothole in it and was bone dry raw wood. Soaked it in canola oil for an hour. Handle has loosened from rivets a bit after three weeks of use and wobbles in my hand when I cut with it.

Kofery 8" Handmade Forged Stainless Steel Knife
I worked many years as a production-line meat cutter and consider myself somewhat of an expert on knives. When I first got this knife, I was not sure how I would like it. Well........... I DO!!!!!!! With a couple of swipes on a diamond sharpener, it is as sharp as all get out!!!!!! I've retired all but my favorite Chicago Cutlery paring knife. (If Kofey had a paring knife, I'd retire it, too.) As Paul Hogan said in Crocodile Dundee - That's not a knife - THIS is a knife!!!

Poor quality handle
The knife arrived with a very loose handle that rattles when shaken. The handle also has sharp edges, completely poor quality. Not worth the purchase at all.

A knife with potential in cooking industry.
The Kofery 8-inch forged butcher cleaver knife is a knife with good blade cut and design. Blade design is unique and perhaps a very early common design in antiquity among traditional Chinese chefs and butchers before the usual rectangular cleaver became popular in post world war 2. Holding on one like this really brings me back to this time when original Chinese cooking cleavers where originally like this Kofery cleaver knife currently sold in the online market. With any cleavers or knives in the market, there is always room for improvement; which I cannot refute or dispute this point with other reviewers. My grandfather and father who were chefs themselves in Asia and North America had used this design of cleaver before.

great quality for the price
Not the most amazing knife I own but a great buy for the price! Sharp as a razor out of the box and extremely comfy to use. Compares to Kiwi Brand knives.

Does the inspector only look or actually holds it to feel it
The handle metal part sticks out from the wooden pieces. The metal edges are sharp cuts in my hand. I will need to smooth them out. Very sharp, cuts very nicely. But not a nice handling feel because of the uneven handle, metal/wood.

good product
This butcher knife is awesome. It is just the right weight and size for use in any given situation. It arrived with well-packaged, with the tip of the knife protected in a little cap. The handle is comfortable and sized for an average hand. Also the knife itself is very sharp. More important, the price is great! It good for a chef or housewife who need dealing with meat.

Very good but finish could be better
Impressive and very sharp. 4 stars because the steel sticks out the handle and it uncomfortable. I will try to grind this out.
