Great all-purpose knife
This is a nice blade and a versatile knife. I've had it for about 2 weeks now and have been using it for a variety of tasks, all of which it accomplishes beautifully. It's good steel and the quality of the fit and finish is excellent - the cutting edge has been polished beautifully and has maintained an edge wonderfully after a number of uses (I've hit it with a smooth steel a few times as a precaution but I have not noticed anything awry).There are a few things about the knife that one could either view as merits or detriments.1. The knife is stamped steel, which makes it a great value for the quality2. That said, the knife is much lighter than one would expect from a 10 incher. This requires a bit of adaptation, but would probably actually be a good thing in a professional kitchen to reduce fatigue.3. It's not as nimble as the cheap old 10 inch gyuto that I sold a few months ago, or even my cheap carbon steel Chinese chef's knife, which has perhaps biased me a bit against it.Overall, the knife is great for breaking down everything from tomatoes to root vegetables. It's a remarkable dicer and it minces well, and is slightly thinner than my Chinese chef knife, which makes better for more delicate work (making matchsticks of carrots, etc.). Moreover, since it's got great length it works well for cutting meat and even carving roasts in a pinch.I'm giving this four stars since while I like the knife, it's not my favorite, nor is it really my first choice for any one task in the kitchen. It can do everything, but there's always something that can do everything a bit better.

This is the best knife I could find given how close it was to grandma’s knife. Grandma’s knife was unmarked, this general profile minus a knife belly,(straight angles) this is grandma’s knife I’m still talking about- made of old world steel, was thin from edge to spine, very light. Super super easy to sharpen so I could use it on anything knowing I just had to clumsily use a sharpening steel. That was grandma’s knife, my problems with this knife are: harder to sharpen by a factor of 7, larger spine= food gets stuck, this knife is heavier than grandma’s knife, I worry about having to soak a whet stone to sharpen it. Newer steels are more finicky to sharpen/deal with in general. This knife was the closest to grandma’s knife I could have found, so far, and replacing grandma’s knife has been the most research I’ve given anything to date. Please contact me if you know a better replacement which meets grandma’s knife specs. Thanks.

Great knife
This is a wonderful knife. Has excellent balance and the handle shape provides great control.Get it professionally sharpened and never put it in the dishwasher and it should last you a long time.

Ordered this as a gift for my wife. She's a professional pastry chef and she loves it. It arrives in perfect usable condition but my wife was sure to have it sharpened before it was ready to be used at work. Yes you can easily spend much more money on a good chefs knife but for the price this is a very good professional quality knife.

Great knife
Great knife it was recommended to me by a friend who is a chef and I love it. I have had mine for a few years and it makes cooking so much easier. I have bought them for gifts for at least 5 of my friends and they all love them. The utility knife and paring knife in this series are also great.

Sweeeeeet Knives!
Mess is the only knife I use in my kitchen! Pro and home you will not be disappointed! Look everyone wants a 10'' till you have to prep something on the line and the 8'' is perfect for that.

Love this knife.
This 12 inch knife is well made, with good balance, wonderful when your cutting a lot of vegetables.The length and gentle curve make easy work when chopping, and lightens the load, as the knife doesn't need to leave the chopping block.

Great quality knife for the price
As any that spend any time in the kitchen know, a quality chef's knife is a must. This is a fantastic "quality" knife. As good a product as those of almost twice the price!

Arrived Dull
Knife was completely dull out of the box and had a very small chip on the tip of the blade. Immediately requested a refund. There doesn’t appear to be an edge ground into this blade.
