Do i need anything special to power this or can i just plug into any powered usb slot?

Just to be clear -- this is the CASE for the Raspberry Pi Zero that comes with adapter cables only. You will still need a cable to power a Raspberry Pi Zero -- One that plugs into the micro-USB slot and into a powered source (charger plug, wall outlet, powered USB) on the other end.

What are the dimentions for the screw nuts?

I used M3 5mm screws. Actually... I bought a kit on Amazon that has multiple M3 standoff pieces... very useful.

Will this be compatible for use with an e-ink display attached to the gpio header?

Can't say yes for all e-ink displays.. There appear to be some that are.... https://www.amazon.com/Resolution-Interface-Embedded-Controller-Raspberry/dp/B07DH48M7N/ref=sr_1_5?crid=AB60RVUZOTKY&keywords=e-ink+display+raspberry+pi&qid=1572236141&sprefix=e-ink+display+%2Caps%2C468&sr=8-5
