What is the width from one grip to the other?

From center ot center of the grips 22inches... I am a big man and it would be great if it was adjustable...

Can one armrests be removed? We have a very tiny bathroom with existing wall mounted bar on the left but need something on right.

No, you cannot take one arm off; if you lean on only one side the other side goes up. It is made as an assist to get up off the toilet. It worked nicely in our home for a couple years, but my husbands balance problems became worse so we had to move to a support system that is faceted to the toilet. If it does not fit properly in your bathroom I would think twice before purchasing it.

The 28" width dimension. Does this 28" encompass the thumscrews?
