Q: Has anyone used this for fine slicing dried sausage ( suacisson ) ? How does it do ?

It is excellent for all thicknesses because of its adjustable blade.My friend has had one for thirty years and has used his extensively for every thing from saucisson and chorizo to rye bread

I have an electric Graef slicer but the answer is definitely no you cannot slice frozen meat

Q: Does the Blade hit the upright part of the carriage when slicing?

No, the blade is to the side of (and outside) the main platform. The upright part of the carriage stays inside the edge of the platform. I'd add a photo if I could, but no facility here to do that.

Q: How thin can the machine slice meat? Is wafer thin ham possible for example? Like shop bought?

it is possible and the blade is very sharp too. The only downside is you have to use one hand to turn the handle so it's not possible to stack the slices neatly in a pile like you would with an electric one - no big deal in truth but if I was purchasing again I'd go electric. Also it's a pain to clean when you remove the blade and reassemble.
