Q: Does it stops holding the temperature after you disconnect/connect the kettle from the base? I wondering if will keep the temp. after serving.

When the kettle disconnect the base, the base will automatic turn off for the sake of safety. The system will remember the last setting. If the kettle put on the base again, you just need to press down the on/off button and it will start boiling or keeping water at last setting temperature.

Q: Is the inside made of one piece of steel, or two pieces welded together?

The bottom is one piece, and the gooseneck is another. Oddly enough, the side (inside or out) has no seam, except where it connects to the bottom and the gooseneck. I have no clue how they did that! It must be formed from a molded tube...? Anyway, because of the seam where the side meets the bottom, I always let it fully dry out before replacing the lid.

There is a temperature probe on the bottom. And the small gasket around the temperature probe is silicone. It reaches food grade and can endure temperature above 302℉. And this kettle has Ul certification.
