what source should i use to connect 2x 200mm to the electricity?

This fan is 12v dc. If you are using it in a computer, then there may be suitable connections on your motherboard. If you are using it "standalone" then a 12v dc power supply, rated 3amp ( for two fans) should be adequate.

which direction should these be installed? I'm using them for a printer enclosure and want to pull the heat out, but there is no direction arrow

Plug the motor in, check which way the fan is blowing then mount in the desired direction.
