I wanted to use these to serve individual portions of chicken liver pâté for a ploughmans buffet.... Will they go soggy?

They wil after a bit but i put water in them 2 c hw long would last. Lasted awhile but should b fine wouldnt hav thought would go soggy wiv that in them. Hope this helped

Can I put warm brandy sauce in them

Yes but they're only small I would use a jug in all honesty they're only good for small portions of sauces
