If these headphones are too tight on my ears, can they be adjusted?

I have this headphone and use it all the time. I have a big head and this instrument accompany me very comfortably. It adjusts as you like and the sound quality is impeccable 👌

What bluetooth model is this 2.0-3.0-4.0 or 5.0

This model is version 3.0 - the battery life is truly astounding....I've used them for at least 8 hours, and the battery life indicator (verbal) still announces "full." Hope this is helpful.

Does these have noise canceling

They do block some sounds. If you need noise cancelling you should look at the model labeled ANC for active noise cancelling made by JLab. Those look the same and cost more say $34 plus, also sold on Amazon.com.
