Pretty f'ing sharp BE CAREFUL
Now I've heard lots of bad things about Dalstrong, and I've also seen lots of great reviews online, so I ultimately bought this, for my workhorse and my first personal knife for work and home. Now typically when you get your first knife you don't get something expensive like this. I've been working in kitchens for nearly 12 years and used a variety of different knife brands over the years. None have ever felt perfectly in my hand like this one, I swear it was made for me. The blade is ridiculously sharp when if first comes, in fact I cut into the actual cutting board on accident on my first slice. The edge lasts and its been a week so far and have yet the need to hone the blade. The coating helps things not stick to the blade especially soft cheeses or butter. For me the weight is perfect, I accidentally got the 9.5" I meant to get the 8" but it's fine I think the longer blade works better for our romaine lettuce anyway. Overall a beautiful knife, sharp, feels wellmade, and comfortable to hold in different positions. I do plan on updating my review much later in time, with new pictures too.Edit 12/05/24:Knife's been great hasn't needed sharpening not once, I hone it maybe once or twice a week depending on workload nothing crazy. I accidentally ran it through a dishwasher once but it's fine. I actually cut into my finger with this not long ago, this thing really is sharp as hell! It was worth the money spent, I can tell it'll last a really long time.

So worth the money!
I received the Scorpion & the Vanquish series Christmas of 23, and I STILL love them. they are incredibly sharp, come with very nice sheaths, and stand up well to use. We do some of our own butchering and I will never use anything else!!!!

Hubby loves!
My husband got this to use at our parish carnival. He helped run a B.B.Q booth. His brother sold burgers while my husband sold his brisket. This was a big show stopper for the guys. I personally don't see the appeal. Nevertheless, he sold out of brisket in only a couple hours and flaunted this new B.B.Q. utensil. It was sharp, easy to use, well made, comfortable to hold, and comes with a blade shield for safe storage. Worth the price and he will probably be coming back again to slowly fill in his collection.

Wow! What an amazing knife!
I have bough several paring knives over the years looking for the perfect one. Finally, this knife is as close as you can get. Simple an amazing knife. Ergonomically designed so that it fits perfectly in your hand and cuts cleanly with no effort. No force or pressure pushing to cut. The blade length is about as close to perfect for cut slicing and chopping of vegetables. Little to no effort needed when cutting meat into small chunks or thin slices. Only downside is the cost. It is pricy but this is balanced with you never needing to purchase another paring knife again.

Scary sharp and just as pretty
You roll the dice when you order a Damascus steel knife of any kind that doesn't cost a ton of money, but I think I rolled eight the hard way with this Scorpion Series of Dalstrong knives. I have the 11" meat knife and 4" paring knife, with the other two on order. The two that I have came frighteningly sharp, shredding thin paper like a razor blade. The Damascus mottling on the blade looks and feels like the real deal (at least it isn't lasered on like most), and even if it is a clever trick, it's good enough to fool me. The resin handle with a spiderweb of metal throughout looks brilliant. I can tell the metal is super hard and should hold an edge well, hopefully not so hard that my clumsy handling will cause the blade to chip. I'm no chef, but my motto has always been that 'you can't have too many knives', and I have many that I am proud of and many more that I'm not so much. I have high hopes for these, and at the moment, they are the first that I show when a fellow enthusiast stops by. Only time will tell how they will hold up with use, so be assured that I will amend this review if they become a disappointment.

Dalstrong Shadow Black 9.5" Chef Knife VS Scorpion 9.5" Chef Knife
This is my 5th Dalstrong knife, I've owned a couple shadow black series, delta wolf, ronin, and gladiator. I'm going to compare this to the Shadow Black series which is also a 9.5". I use this for work as a sushi chef.Comparison between Shadow Black and Scorpion Series 9.5" Chef Knife:Shadow Black is a great chef knife, it's light weight, grip is comfortable and secure, and pretty cool with its all blacked out look. The value is worth it for the knife as it is half the cost of the Scorpion Chef Knife. The con for this is that because the blade is light and flexible, the tip of the blade may chip on heavy use and the edge won't hold as long as the Scorpion. Using it 10hrs a day for prep and cooking, I find myself giving it a quick hone every day or twoSCORPION 9.5" Chef Knife: I knew that I was purchasing a knife that was over the top in terms of presence. The blade is much bigger, the patterns are eye catching, and it's also a much durable knife. The weight is heavier but side by side comparison it's easy to tell why, but that's not a bad thing. I fillet several 25-30lb whole Salmon and the extra weight is useful for cutting through the bone/spine. Blade came super sharp, you can feel it hook nicely, and the blade is tougher giving it a longer lasting edge retention. The price is steep but the marketing team got to me and had me curious enough to buy one lol only con I would say is that the grip is not textured or textured enough and can make it slippery, kind of dangerous if a fairly heavy and one of Dalstrong's sharpest knife were to slip out of your hand.

my second dalstrong chef knife
The Black Damascus finish looks sleek and stylish, and the black and red honeycomb resin handle feels super comfortable and sturdy in hand.This is actually my second Dalstrong purchase — the first one I bought 6 years ago is still going strong. I decided to get a new one just for a change, but the old one is still in perfect condition. It’s clear Dalstrong knives are built to last!
