The Best Gluten-Free Biscuit/Scone Mix I Have Used
I purchased XO Baking Co. Biscuit and Scone mix from a local store. I had this sitting on a shelf in my cupboard waiting to be used. I was a bit nervous about a gf biscuit or scone mix. I wasn't sure if the texture would be too dense like other mixes I have tried . I have used XO's muffin mix, and that stuff is awesome, so I did have some hope. The box has recipes for both the biscuits and the basic scone recipe where you add what you like. I made both regular biscuits and scones from the one mix, and the yield for both was quite a bit for my family of three. I grated cold butter into the mix in the amount stated for scones. It is a bit more than the biscuit mix. I divided that dough to make biscuits from half and scones from the other half. I continued the dough with half of the stated biscuit ingredients. For the biscuits, I formed the dough into a rectangle by hand on waxed paper, and from that, I cut the dough into small wedges. While those baked, I worked on my scones. From making regular (non gluten-free) scones, I have created several variations. This time, I was craving an apple flavor, so I made apple fritter inspired scones. Into a small bowl, I added a peeled and chopped apple, cinnamon, and sugar. I mixed that and let it sit while I mixed the dough. I added half of the stated ingredients for scones as well as a bit of salt and a small amount (about half of a teaspoon) of cinnamon. For the top, I made an egg wash and a sugar and cinnamon mix of about one and a half to two tablespoons of sugar and cinnamon. (I use turbinado sugar.) After mixing the dough, I placed half of that scone dough on waxed paper and formed a circle. I evenly added the apple mix and gently pressed that. I placed pieces of the remaining dough on top of the apple mix and used my hands to gently spread it to cover the apple mix completely. I egg washed the dough and sprinkled the sugar and cinnamon mix on top. I cut into wedges and placed onto parchment on a perforated baking sheet. The biscuits came out so fluffy in comparison to what I had expected. The flavor is excellent and my daughter who is ultra picky, due to her autism, loved them. The scones were just amazing. This mix is no longer in stock at the store I originally purchased, so I regret not stocking up. Should I find this locally, and for less than listed here, I will definitely buy it again. I totally recommend this mix.

Loved this pancake mix, was not grainy at all even though my husband does not have to eat gluten free he loved them. The large box is very handy and appreciated,

Very good biscuits, but needed to amend the directions
My husband had to go gluten free, and he loves biscuits. The gluten-free recipes I found either come out like rocks, or they have so many ingredients it makes me tired just reading them. So I bought this mix, and he says he can't tell these from the regular kind. The only problem I had was the directions to mix them in a blender. It made a mess, so instead I just cut in the butter with a pastry cutter like I would do normal biscuits, and it worked well.
