Does this contain animal rennet from a pig?

Kraft Romano cheese contains calf-derived enzymes - specifically lipase. Kraft Parmesan usually does not contain calf-derived enzymes such as rennet or lipase. Kraft has stated if the label only says "enzymes" without specifying if it's plant/microbial/animal, they can't guarantee it doesn't contain animal enzymes. It may or may not or contain a mix, as appears to be the case here.

What kind of cellulose is used?

I do not know. An article published said wood cellulose was powdered and put into Krafts cheese. I use it all the time because I basically grew up on it. I am lactose intolerant but have had no problem with this cheese.

No ... it's like Parmesan Cheese. It does not need to be refrigerated.
