Good quality fillet knife. Not too flexible but enough to get a good fish fillet and remove the skin. Very sharp.

It is a very sharp Nice. It came in a nice stable box, but without any plastic safety sheath for the blade, it's a bit disappointing. I have no wall magnet and It lot better to have a sheath on that blade. I need to see what I can get one for this if not I sent it back. I don't put this in a drawer or stand without safety.Will update review.

I bought this 7-inch HOSHANHO fillet knife mainly for cleaning and filleting fish, and it has worked really well. Right out of the box it was extremely sharp and made very clean cuts. The blade has just the right amount of flexibility, which makes it easy to work along the bones and get nice fillets without wasting meat.The handle feels comfortable and secure in the hand, even when things get a bit wet while cleaning fish. The high carbon stainless steel blade also seems to hold its edge well after several uses.Overall, this is a great fillet knife for the price. It’s sharp, well balanced, and does exactly what you want when preparing fish. I would definitely recommend it to anyone looking for a good fillet or boning knife.
