When you figure out out to use these noodles they are a really good replacement.
I waited until I used these noodles a few times before writing this review. Nothing is exactly like a real carb filled noodle, but these are not bad when your are craving that type of starch and are avoiding carbs.There are a couple of necessary step to achieving success in the use of these noodles. 1) Drain and rinse the noodles, very well. There is a weird fishy odor which rinses away completely. 2) Dry your noodles before use. It is really easy to do this, simply place them in a hot, dry skillet and stir around until most of the moisture is gone. If you overcook them they will not burn, they just start shrinking and get stringy.Once you do those steps add them to your sauce and enjoy. My husband and I agree that they taste best in Asian food applications and heavy gravy (like stroganoff) We did not like them as much in tomato based sauce.Miracle noodles are now a regular part of our weekly menus.

These are terrible!
For starters they smell horrible! You have to rinse them before you start to prepare. Then you place in boiling water for 2 minutes, then you put in a dry pan to dry the noodles. The noodles taste like nothing, which they may be able to take on the flavor of sauces but I could not get past the texture!! They are rubbery, chewy, and it was almost like trying to chew on a rubber band! I did not like the after taste either.If you like these and can eat these, more power to you! I hate them and threw the whole box of them away. YUCK!!

These noodles really don’t have any flavor, so they will absorb the flavor of any sauce that is mixed with them. However, if you are sensitive to weird textured food, these are not for you. They’re the texture of tough jello and not actual noodles. I wasn’t able to eat them completely based on the texture.

I actually LIKE them. But get ONE pack to start.
Rinse with tap water in a colander. Rinse with a kettle of boiling water. Roll in a tea towel to dry them and add pesto or pasta sauce and maybe a can of tuna or chicken or something. I also make a mean shirataki and cheese. I find them perfectly tasty. But I DON'T try to put them in stir-fry because I have a feeling they wouldn't be appealing.I'm not kidding.... I've eaten a LOT of them.They have a slight fishy odor when you open them and may actually have it when prepared, but honestly I don't notice or mind it at all (and I do have a decent palate), so do try one pack before purchasing a ton and see if you have any issues with them.Disclaimer: I have traveled a lot and am not afraid of different tastes and textures.The biggest complaints I have heard from others are fishy odor and slimy texture. I just don't find them that way in a nice sauce with some veg and/or meat..

Decent substitute for pasta
A decent, no- carb substitute for pasta. Has no taste at all. Good texture

Awesome - Follow the directions and then some.
I love these noodles. I think some of the complaints are from people who don't completely follow the directions. Regardless, I have a few tips. #1 I rinse them off COMPLETELY in a colander. I mean, think about rising them like you rinse shampoo out of your hair. Get rid of all the liquid that was in the bag. This can take several minutes. #2 I boil water in the microwave/stove top and drop my RINSED noodles into the water and walk away for 3-8 minutes. #3 In a skillet with medium heat, take your drained noodles, and heat them to get rid of all of the water in the noodles. This can take up to five minutes of lightly stirring around them around with a wooden spoon. I do not add anything to the noodles until the water is out. Then add salt/garlic, cumin, soy sauce, salsa, whatever. I've even put them into a premade soup (after I've dried them in the skillet). These are terrific, but it's important you follow the steps. Yes they smell fishy after opening the bag, but anyone who says they smell fishy while eating them, did not rinse them off.

Smell Doesn't Go Away
I opened these and rinsed for 10 minutes. The smell, however, stayed in my kitchen for days. The SMELL like rotten fish.After I opened them, I rinsed the bag that they came in, under water. Smell remained in bag, so I double wrapped it in a plastic bag, and sat it outside. The smell from draining in the sink, could not be washed down the drain. When cooking, the smell was bad, but what was worse, is that the odor remains for days. Unusable. Please try to make your noodles without a smell. The taste was not that bad if cooked properly.

Meh.
OK, I have high triglycerides, so I'm supposed to go low carb, which limits what I can eat, plus I'm sulfite sensitive, which eliminates eating most anything other than meat I cook myself. So you can imagine that my diet is pretty boring. So I thought I'd try this stuff. Even if it just changed the texture of what I eat it would be a win. Plus, the fact that it's pretty much 100% soluble fiber isn't bad either, when you are a guy that eats a lot of meat.So the package came and it was so densely packed I thought someone had mailed me a brick. I slit the tape on the package and was immediately rewarded with a fishy smell. I had nicked one of the packages and the fishy-smelling water the stuff is packed in leaked out. Don't do that. It's a mess.So I thought I'd just throw the stuff in some chicken broth to try it out. I faithfully rinsed it to get rid of the fishiness as instructed. So, was it a win? Short answer: No. As described by others, it isn't sticky like a proper noodle and is so slippery it's hard to eat. It would help if the noodles were shorter. But the real problem is that it didn't take on the flavor of the broth. It tasted like nothing. Even cardboard would have more flavor. I can't see this stuff being useful if the texture is nothing to write home about AND it doesn't really absorb flavor. It might be useful as a filler in a more complicated dish, but I don't get to eat complicated dishes. Even then, the infinitely long noodles wouldn't work. I'd put my money on the rice form in that situation.
