Can I use this in my coffee as a substitute to half and half, or would it taste weird unless mixed with other ingredients in baking?

Both my boyfriend and I use it as a coffee creamer. It does have a coconut flavor, but we really like it. I also use it in my Chai teas and I love the flavor. I use almond milk or oat milk for my baking...

is there any carageenan or gums added?

I freeze this in ice cube trays all the time, and use them in my smoothies, ice cream, iced coffee etc. It comes out of the tray perfectly with no mess, and I don't notice any change in the consistency when it's blended.

Coconut cream is like the top half of a can of full-fat coconut milk. It's thicker and has less water. You can probably substitute it in some recipes, or in a pinch, you could thin it with a little water or coconut water as a substitute. Where it's really useful is recipes that call for just that top half of a can of coconut milk. You can also chill it and whip it for a great dairy-free whipped cream substitute.
