This is great yeast. It works well in King Art's Japanese milk bread; no knead boules and pizza crust-focaccia. I'm storing it in a 1 1/2-cup sealed container in the fridge. It was super fresh when I opened it. The granules are super small so you can mix it into flour easily. The first rise I'm getting is super impressive. Second rise is about normal. The price was great. I do need to make an effort to check on the dough during the first rise because it was too much with one batch of no knead dough.

I make everything from scratch, including several types of breads, and have been doing so for thirty years. I decided to try this new brand this year, and it does not disappoint! Honestly, of all the brands I've tried, this works the best, and you get a wonderful amount for the cost. The granules are small and activate quickly in both warm milk and water. My breads rise perfectly, and the flavor is perfect! I store in the refrigerator to maintain its effectiveness until I need to make a new order, which doesn't take that long with the rate I use it. :)

Made a perfect loaf with this product. Highly recommend it. I used the quick course setting to make a delicious white bread recipe using my bread maker which had been stored away for months. Nice not to have to heat the oven during this heatwave.
