SKU# for replacement pads?

replace with cool stop or eagle calw pads and holders

Are the two brakes in a set identical, or is there a front and a rear? I would like to buy one set & use them on the front for two different bikes.

They are identical, not front/rear specific.

I remove my front wheel for transportation. Will these open wide enough for my 700x40 tire?

Depends on the fork since the back of the brake pads usually hit the fork. For me it works with 700x40 but it takes a bit of force to get the tire past the brake pads.

Will these brakes work in place of v brakes or is there not enough clearence between the tire and the cable with 2.0 tires

These brakes are designed for cyclocross bikes, so with the shorter arms there likely is not enough room for a 2.0 tire on a 26 or 27.5 inch MTB rim. Try something like the Avid 7 or Cane Creek 3 brakes.
