Wonderfully sharp! Watch Out!
I splurged and bought this Damascus steel knife. It is wonderful! It has a nice balance and is very sharp. I love the blue color. It does a great job cutting everything with little effort. If you had to get by with only one knife, this knife would be it! I have other well known, top rated, German knives and I would place this knife in the same category as them. Excellent!

Amazing Knife
My 4th Cangshan Kita series purchase. I'm collecting the models I have use for a month at a time.You won't be sorry you bought this knife! It is well worth the investment.

Limited functionality but a quality knife
Overall, I enjoy using this knife. As a professional chef, I own dozen of knives. This blade is on the short side so the uses are limited but I enjoy using it. The steel is sharp out of the box and rust resistant. It is a beautiful blade and the cover does magnetize though it is not quite secure. Its extremely heavy for such a small knife but the balance is not bad. For less than $80usd, its a good knife. The functionality is limited due to size but I can still say that I would be okay with a friend or family member buying this knife.

Wow as promised!
Sharper than you can imagine, nicely balanced and is a beautiful knife, wonderful for smaller hands at 6” blade and will be looking to buy a few more, but very very sharp so be careful!

This is an Elegant and Top-Notch Kitchen Tool.
The artisanal quality of this knife is absolutely stunning. It's a functional piece of artwork whose beauty is only surpassed by its ability to make smooth effortless cuts to make your meal prep a breeze. As a former chef, I've used a lot of different knives, some high-end brands and some run-of-the-mill everyday household nightmare knives and these are at the top. As a point of reference, my everyday knives have been Globals, and I love them, but they can be a bit delicate. At this stage, they're about 15 years old, and the ones I use the most have some knicks and bruises. They're still serviceable, but I expect this knife will surpass those in performance due to the 60 +/- 2 Rockwell Hardness Rating that my current knives don't have.The most important kitchen tool is a sharp knife. That doesn't mean they have to be utilitarian and ugly, as Cangshan clearly understands. This knife feels good in my hand and is perfectly balanced. If you use a lot of pressure on your knives when prepping, your knife either isn't sharp, is of poor quality, or, more often than not, both. This knife has a substantial weight without being heavy and glides through everything like a hot knife through butter. That's exactly what you want. If you have to exert a lot of force to get through things, the knife isn't adequately doing its job, which means you're working too hard. Maybe that's not important if you just need to slice up a tomato for a salad, but you'll definitely feel it if you're doing holiday prep to entertain the whole extended crew. This is heavier than the Global knife in my kit of comparable size, but it's not heavy by any means. The bit of additional heft this one has means it's a bit easier to use when you're going through something requiring a bit more pressure, but not so heavy as to illicit hand fatigue. It's the perfect tool for everyday meal prep where you don't need a larger knife. If you're trying to outfit your kitchen and looking for quality knives, Cangshans are a great option if they fit within your budget.Besides being beautiful, it comes immaculately boxed in a way that makes it an impressive gift. It's exactly what I would expect for a knife in this price range. The knife itself is fully displayed in the interior box with protection over the tip. Cangshan makes an impressive presentation without going overboard and you can tell that they're invested in the actual product, not overinvested in packaging to illicit sales. It's again, the perfect balance. The knife comes with a matching magnetized sheath, so if you don't have a knife block you don't have to worry about the blade getting damaged when stored in a drawer.Beautiful to look at, a pleasure to use, easy to clean, and tough as nails quality that will last a lifetime with proper care, you really can't go wrong with this knife or any knife in the Cangshan KITA range.
