Excellent taste and texture
I believe no one with a waffle maker would know these were Gluten Free. We've tried them with toppings and just plain. Delicious.

Batter rises to thick for pancake .
Quality ingredients do not meet regular mix without Gluten free family and I didn't like texture and flavor.

Tastes great - even for a wedding reception!
When our daughter's wedding became a Covid-lockdown casualty, we lowered the guest list from 150-plus to 18 and moved everything to our yard. She originally wanted chicken and waffles for the reception. When plans changed, I decided her original menu had to happen. Opting for this mix to make prep a little easier, I am SO glad I did. They were perfect and the best tasting gluten-free waffles we've ever made. I did modify the recipe on the bag by first, separating the egg(s) and whipping them first with 1/4 tsp of cream of tartar until fluffy, then adding the rest of the ingredients (including egg yolks). And secondly, we substituted full-fat coconut milk (from can) to make them dairy-free. Since the wedding, we keep a bag of this mix on hand.

Do not buy!
We have tried this twice. My husband and I think it's horrible! It doesn't spread out at all in the pan. It just stays a big blob in the pan. You have to flatten it with the spatula. Takes a very long time to cook. We added raspberries & bananas this morning, and we both agreed it didn't taste very good. Even with pure maple syrup. It's very expensive for a pancake mix. I threw the rest of the mix into the garbage!

Pleasantly Surprised! Solid 4 stars
I was pleasantly surprised by this pancake mix! I’ve been on the search for a gluten free mix that is also approved by my blood type diet and these ingredients did the job.I used a combination of oat milk and rice milk and after mixing noticed the batter was too watery, so I added more mix. After allowing the batter to rest a few minutes, it then looked too thick! So I added more rice milk until the consistency was thick and gooey (not what I wanted but the batter wasn’t changing much). At this point, I was nervous and preparing myself for the worst. Using a ladle, I scooped out the very thick batter and watched it slowwwwwly fall out of the spoon into the pan. I then used the bottom of the ladle to swirl the batter around...if I hadn’t, it would have been a huge sticky mound. I cautiously flipped it over...whew! Smooth landing. They started to rise and the color was looking good. I plopped the pancake onto my plate with a little butter (not diet approved, so don’t judge lol) and some real maple syrup. I’m from New England, so we use the real stuff. Took a bite with my eyes closed and was pleasantly surprised! The texture was fluffy and just sliiiiightly chewy. It also was not grainy...nice and smooth, unlike other pancake mixes I’ve tried. Above all, the taste was great! It was slightly nutty, with a nice wholesome whole grain taste. Im a pancake girl, who deviates sometimes into waffle land. I don’t think this texture of batter would work for waffles, but if I happen to try it, I’ll update my review! All in all, solid 4 stars. This picture is my second pancake, which cooked a little too long...the first looked better, I promise! ;)

The texture and consistency of the batter make great waffles and pancakes.

A little bit gummy
I am not sure if we did something wrong while making these. But they came out a little bit gummy. That happens a lot for gluten free stuff. They where good besides that.

TERRIBLE Directions and Ingredient List
This mix has some of the worst directions I have seen in over 60 years of cooking and baking. I bought this early in the pandemic because, even though I live in a major American city, I was having trouble getting gluten-free products. I never used it all these months because it appeared that you had to make the whole package at one time which would make too much for one person. I decided to use it up just to get it out of the cabinet. Where to start with the bad directions? First on the package is "What you will need". Then "Shake bag to wake up ingredients before use." Huh? Do they mean shake it because the leavening may have settled? I have never heard of waking up ingredients. After a large space and directly under the oil amount, there is "ingredients at room temperature". Another "Huh". These are pancakes, not an angel food cake. I did not follow that because I have never had to do that for anything other than very leavening-sensitive baking. As I will write below, you need ingredients that are not listed.If that is not enough, next is beat egg slightly with an electric mixer. An electric mixer for one egg? I used a fork and, in fact, used the fork to do all the mixing which worked just fine. The next direction is add milk, oil, and vanilla. It was only THEN that I noticed that this recipe was for only 1 cup of the mix. I looked at the quantity of milk. It is totally out of proportion to the 1 cup of the mix. It calls for 1-3/4 cups of milk. I felt that would be way too much for 1 cup of mix. I added only 1 cup of milk which gave it the right consistency. I did add 2 more tablespoons of milk for the last pan of pancakes because it was getting thicker. I have found that rice flour keeps absorbing liquid as it sits. (After I finished, I looked at the gluten-free Bisquick package. It calls for 1 cup of Bisquick and 1 cup of milk. I felt vindicated that my many years of cooking led me to question the amount of milk.) Vanilla? No where does the package list it as an ingredient or say how much to add. I added 1/2 tsp. I'm not sure vanilla makes any difference to the taste because the mix contains flaxseed, quinoa flour, and buckwheat flour -- all flours with flavor.Next -- lightly oil pan. I used a Calpholon skillet which is non-stick. First batch I used about 1/2 tbsp. butter -- lots of sticking. No where does it say that you need to re-oil the pan between each batch, which is very, very necessary. Also the oil/butter to do this is not listed as an ingredient.The directions then call for ladling 1/4 cup batter. Even with the thicker batter, this made about a 6-inch pancake. It took a very long time to cook the center of the pancake while the edges were getting very dark. I then began to use about 3/8th of a cup so that the pancakes were made about 4-inch pancakes. This worked fine. No where on the package does it tell you how many pancakes this makes. Using my adjustments above, it made 10 pancakes.The pancakes turned out fine which is why I gave it 2 stars instead of 1 or the zero it deserves, but I would never buy this again. Final note, the package includes a recipe for berry sauce which I did not make. (I used maple syrup.) The directions say the sauce takes 5 to 6 minutes. I find it hard to believe that 2 cups of frozen berries would defrost and cook in that time. Also the amount of liquid in frozen berries varies widely. For example, frozen raspberries have a lot of liquid while frozen blueberries have almost none. If you are going to make this, I suggest that you make it before you make the pancakes so that you can adjust the recipe to make it the desired consistency.
