The expiration date is three years after the manufacturer date.

If added in the correct quantity, no it's not slimy at all. I use 1/4 tsp Xanthan gum per cup of liquid and it works great. In my case I'm using it to thicken bbq sauce. If you want it thicker try 1/2 tsp.
