I found it to be just about right. There are challenges but nothing you're going to spend all day working on. There are no difficult settings to make it any harder or easier. There are a lot of collectibles and getting those are time consuming, but not hard.

How many people can play the game at one time on the same console?

It's a one person game I'm not sure about the online gameplay though!

can you play a female in this game

No, you don't get to choose who you play. In the 1st game you play as the assassin Altiar and in the real world you play Desmond. In all of the games that have come out on the Xbox 360 you play as male characters. I have not played Liberation though, and I want to say that one had a female character but I can't be sure since it required high speed internet to buy and the disc version came out on a set with games I already had so I never bought it :(
