can i use it for sourdough bagguettes?

Yes you can use it for sourdough baguettes it’s really but use rice flour so your dough doesn’t stick to the cloth

How does the baguette get baked after proving in this couche?

Transfer to a baking tray (carefully) or as I do, a perforated baguette tray. The latter produces the best result.
