You certainly can. Rather than switching anything on the machine simply reverse the electrode and ground cables. I've used it both ways - dcen and dcep - with the same level of performance either way.

Q: how thick of steel can the 160 AMP stick weld?

I was able to run 5/32" 7018 on this machine at 160 amps. Ran very smoothly and with this size electrode material thickness isn't an issue. You'd only have to bevel if you wanted full penetration welds on butt joints, but you'd do that on anything over 3/16" thick unless you were using some form of backing bar, ceramic backing or welding with sub-arc. For fillet welds this could weld literally any thickness of steel with electrodes up to 5/32". Most welders these days rarely use anything over 1/8" electrodes. The only real issue is duty cycle... You won't run many rods at 160 amps before she thermally shuts down. Also, the electrode holder is kind of a piece of junk, but it can readily be replaced.

I commend your choice to wire this for 220, far better performance than using 110. I think you might have gone a little overboard on the breaker though - I am using a 20 AMP double pole breaker and have had no issues. 10 awg wire is a good choice provided you aren't running over 50 feet.
