How many standard plates will it hold? Do you have to remove the piece to fit standard plates?

This machine is not meant to load 200 pounds of plates. 125 pounds should be good.

What gage steel is this made out of?

I don't know but it's strong enough. I've had 200 pounds loaded up on this machine and it's held up well. I see the nylon pulleys failing way before the steel. Everything has held up well after a year of daily use but I foresee one day replacing the nylon pulleys with steel pulleys.

Need to replace cables what size do we need to get?

Did you ever find out? I need to replace one of the cables as well.

Does this come with the pull bars?

Yes come with the overhead bar for pull downs and the shorter bar to curl and do extensions
