What is the shelf life of this rice?

If you have a problem with bugs in your rice, put it in the freezer for 24 hours then store in in an air tight container. Usually the problem is meal moths. It took me about a year with the traps but I no longer have moths. I also freeze most of my grains and dry beans for 24 hours before putting them on the shelf.

Is it slightly stickly enough to make sushi or rice balls?

No, it comes out fluffy but not sticky. Use Nishiki white rice for sushi. It is plenty sticky.
