Are these glasses "anti-sweat"? Would the foam on top stick to my face to stop sweat from getting in my eyes?

I'd say yes, they definitely seal on the face well enough to prevent sweat from falling down from your head to your eyes. But if your eye area within the foam perimeter gets warm/sweaty then you'll generate fog inside which now can't escape.

What's the difference between the "clear h2x anti-fog" and the "indoor/outdoor mirror anti-fog"?

The indoor outdoor has anti glare which works great in bright sunlight but does not make indoors dark by using a smoked or dark lenses to cut down on sun induced glare. Not recomendable for night time use. Use the clear for that.
