What is the exact thickness of the slices it makes with the straight blade?

I've never measured it but it can make tissue thin or as thick as an average pickle chip. This is the best tool for commercial kitchen. I have three of them. I'm a career chef and this is a must for prep. They are pricey but worth every penny. The blade can be removed and sharpened. It is quality just as any high priced japanese steel tool. Never settle for less than Benriner.

What is the width of the cutting surface? I am trying to decide if I should get this one or the "jumbo" version to slice whole apples. Thanks!

If you are going to slice apples, I recommend the Jumbo. I really like ours, but it is too small for apples or many onions I have sliced. I will likely get a Jumbo also.

Does one of the blades julienne?

Yes, the device comes with three different julienne sizes, but you have to be somewhat gentle with the julienne blades. The very finest/smallest bent pretty easily when I was trying to shred carrots.

Would this slice a block of hard cheese well?

Actually don't use a mandolin, but you can use a knife or like me, I use a wire, or French cheese slicer. Slicing cheese will dull the blade, and as stated before be dangerous to clean.
