This incredibly light knife allows you to nimbly cut. I used to be a fan of heavy kitchen equipment, but now I realize knives should be light when cutting through soft things. The blade is incredible, it stays sharp after many uses! I use it to cut boneless meat, hard root vegetables, and soft vegetables like green onions. A big step up from my dollar store knife. The secret to everlasting sharpness? It is CARBON stainless steel, not REGULAR shiny stainless steel. Carbon stays sharp and is stronger, but more susceptible to rust if you leave it in water, but don't worry. I just let my wet knife air dry dripping wet and no harm done! Pros and chefs use carbon steel. Regular stainless steel dulls faster, but makes up for it by being virtually rust proof.

I Bought this knife (Kuhn Rikon non-stick paring) from "The Kitchen Cabinet" and it arrived the day before the earliest estimated delivery date... so that was a good start. First thing I did to quickly test the sharpness of the knife was to try slicing some paper. Straight 'out of the box' (no box, just a small flimsy cellophane 'bag') this knife is surprisingly sharp! It cuts A4 copy paper, glossy, and newspaper like a razor. Will it shave the hairs off your arm??? YES! but only with a little pressure and resultant shaving rash! feels like a disposable razor does after a full face shave. So, out of the box, this knife is not quite razor sharp, but is as close as you will get for this price (~£6.50 posted). the blade seems to lose its edge quite quickly considering its a carbon steel blade, but I did cut a lot of paper before it lost its shave-sharp edge. Fruit and Veg? after spending way too long cutting paper, I tried the knife for its intended purpose. The knife is comfortable in most grips...nice and lightweight and goes through fruit and veg like a hot knife thro.... well you get the idea, its sharp. I managed to slice a grape into 16 wafer thin slices without difficulty (I have zero knife/chef skills)... even after dulling the blade on paper. The knife needs a fair bit of pressure to push-cut a rubbery banana skin BUT with a slight slicing or sawing action its back to the butter situation....cuts great. Chopping works pretty well, but with the ~4inch blade you probably not want to chop larger veg, or attempt large batches of chopping - You would get tired quickly - but that's not what this knife is for. If I had one small gripe with this knife it would be the fact that the sheath does come off a little too easily in my opinion; Although, most knives in this price range don't even come with a sheath so the Kuhn Rikon still (just) gets 5 stars from me. All in all, this is a great little parer/utility/all-rounder for a very good price... if it had a more secure sheath (even if it cost a little more) it would be pretty much perfect.

Super sharp (pointy too) and comes with a brilliant little protector. I bought a really expensive ceramic knife (Kyrocera) a couple of years ago (now blunt) and paid a fiver for a really naff blade protector which some twerp had literally cut off with a hack saw. This was a quarter of the price and better? I'll let you know in a couple of years.

Very pleased with this purchase: a great quality razor sharp blade, a comfortable non-slip handle and a nice light feel . For the price it is a formidable value!!
