can i shorten the flex pipe?

if you cut off part of the pipe you may remove the section that slots into the compression fitting !!!

being it made in Germany would it be suitable for the UK plumbing under the sink fixing

I don't know the plumbing waste fittings in Portugal, I can only suggest you check carefully if the fittings match. Otherwise it's a pretty straightforward job to fit the trap.
