How do you make the seat go down?

There’s a lever under the seat. When sitting on seat, lifting the lever allows you to either raise or lower the seat. Works very well.

If i purchase one with the backrest, can i use it without the backrest just the same? (the color i want is out of stock without the backrest)

There is absolutely no truth to the commenter who said leaving the backrest off would destabilize it. That's rediculous. Any craftsmen would know a stool WITHOUT a backrest or arms is highly desirable. Sometimes you just need a stool. Your posture is better simply sitting straight up which the saddle seat encourages due to its positioning.
