Has anyone used this to make wood fired pizza? If so, did you maintain the same ingredient ratios?

I've tried it, and don't recommend it with this brand. Gluten free dough has a much lower burn temperature due to the high starch content. The crust will blacken before the toppings are done at 700 degrees. I tried concocting crusts with less starch and higher glycemic index (healthier,too), with almond flour and whole grain/legume gluten free flours. They tolerate higher temperatures, but don't hold together as well (being grainier than the rice/potato/tapioca starches) so be sure to add xanthum gum. The highest temperature I"ve ever succeeded at was 450 degrees in a regular oven. You can try it while the wood fired oven is "warming up." Personally, I find it's just easier to put in a regular oven on a wood steak plank (dusted w/cornmeal) for that extra flavor. GF pizzas are small enough (no gluten elasticity, so size limits) to fit most steak planks. Good luck.

I use this as an all purpose flour, you can add egg replacer that is vegan if you want to use it as a pizza crust dough

The directions state that the eggs can be omitted, using ONLY WATER. No egg substitutes necessary.

Anyone use this to make cookies?

I wouldn't recommend it. However you might be able to make biscuits.
